I'm dating a girl that wont open up to me and tell me her deeper thoughts and whatnots. She only seems to talk about what's on the surface and stuff that I would call boring. How can I get her to open up?

You will have to take the initiative of opening serious subjects and see what she has to say about them. Then slowly divert the conversation to personal aspects, and see whether she will interact with you or not.
This way you will be able to find out if she is a shallow person or not.
