Panattoni Bread

A friend of mine requested that i post the recipe of one kind of bread called 'Panattoni Bread' and thus I've done a bit of research to find out what exactly it is and where it comes from.
Panattoni Bread comes from Italy and it's mainly made in Christmas. So simply put, Panattoni is an Italian Christmas bread filled with dried fruits and raisins! Yum!

Ingredients:
- 2 sachets yeast
- 1/2 cup warm water
- 1/2 cup milk
- 1/2 cup sugar
- 1 tsp. salt
- 1/2 cup soft butter
- 2 eggs, beaten
- 4 1/2 to 5 cups flour
- 1/2 cup raisins or sultanas
- 1/2 cup chopped candied lemon peel
- 2 tbsp. nuts (hazelnut, walnut, almond)

Three Kings Bread

I came across this recipe in a Mexican food brochure ... How happy I am for finding it!
Three Kings Bread is the perfect thing to bake in the Holidays, but it's also a treat all year round.
I goes perfectly with a cup of coffee ... that's how I enjoy my slice; in the morning with a big mug of coffee with a splash of milk ... YUM-O !!!
The good thing about this bread, is that you cane make the dough, leave it to rest and do something else while waiting ... no hassle!
Oh! i had to learn how to braid dough for this recipe! That was fun! And the result is a master piece! You'll feel proud!

You must be wondering what 'Kushari' is ... It's a traditional Egyptian dish ... Totally Yum-O!
Kushari is an easy dish to make, but you'll need time in the kitchen to make it! Don't freak out! It's worth it!

Ingredients:
1 cup brown lentils
1 cup rice
1 cup cooked pasta -small elbow macaroni-
2 large onions, diced
5 cloves garlic, minced
1 can chopped tomatoes
olive oil
vinegar

Lebanese Sfiha 'Lahm Bi Ajin'

Lebanese cuisine is absolutely mouthwatering ... it's difficult finding a dish that isn't delicious!
One of my favorite yummy things are pastries called Sfiha or some like to call them Lahm Bi Ajin, which translates into meat with pastry!
These make a great snack or soup accompaniment!
I guarantee that if you try this, you'll fall in love with it!

Ingredients: (this amount makes a whole lot!)

Dough:
1 kg (5 cups) plain flour
1 tsp dry yeast
2 tbsp salt
2 tbsp sugar
1 1/4 cups water

Filling:
1/2 kg ground meat
1 kg firm tomatoes, finely chopped
5 medium onions, finely chopped
1 tsp salt
A dash of: cayenne red pepper, cinnamon, ground allspice
2 tbsp butter
2 tbsp yogurt
1 tbsp sesame paste (Tahini)
5 tbsp fried pine nuts

Easy, Savory Chicken Tajine

It’s been too long since I’ve last posted a recipe … sorry about that!
Now, it’s Ramadan and I’m back with a few yummy dishes, ones perfect for the Holy month.
I don’t know about you, but in Ramadan most of the times I crave Arabic food! I don’t go for the mashed potatoes & steak, but for the lamb & potato stew, as an example!
In the coming couple of weeks, I’ll be posting Arabic dishes and today I’ll be starting with a favorite of mine, which my dad used to make a lot; Chicken Tajine.

Tajine is a traditional Moroccan dish, literally a dish … one made of heavy clay.
The ingredients are mixed in it, covered & it is put in an oven or over a fire to cook. Thus, any recipe made in that dish is also called Tajine.

As you might already know, Curry is a traditional Indian Spice & is used in most Indian dishes ...
When I was a kid, the day my mom made curry I'd freak out! I didn't like it ... But the other day, I said to myself, why not try making the curry & seeing ... So I did.
I followed my mom's recipe of Chicken & Egg Curry & prayed for it to come out extra delicious ... & it did! It was fantastic!
I was surprised to find that I loved the taste. I was surprised that it reminded me of my mom & our old kitchen! ... You should really try this & make it a meal for you & your loved ones ... It's a heart-warming recipe that you should make for the ones you love.

We all know that the most important meal of the day is breakfast ... So, it has to be both yummy & healthy & gives lots of energy for starting the day.
Now that we've basically gotten out our winter coats & are waiting for the winds to blow & the snow to snow ... I have found a great traditional Scottish recipe for a traditional Scottish breakfast item!
Get ready for ... Scotch Eggs!
To make these you have to either prepare them the night before, or wake up really early!

- Ingredients:
4 medium hard-boiled eggs, well chilled
350 grms minced meat
1/2 cup flour
1 egg, beaten
1 cup bread crumbs
Vegetable oil for frying

Czech Goulash

One of the yummiest Czech dishes is the Beef Goulash.
It is easy, heartwarming & very delicious.

Ingredients:

500g beef, cute into cubes
300g oinions, chopped
6 tbsp olive oil
salt, pepper, sweet paprika, marjoram
5 cloves garlic, crushed
1 small can tomato paste
400cl hot water
1 slice dark bread, cut into small cubes
oinion rings for decoration

Brown meat, oinion & garlic in olive oil, add salt, pepper, paprika, marjoram & tomato paste. Simmer, add hot water. Add bread cubes & simmer until bread dissolves.
Serve with potatoes & decorate with onion rings.

Summer Spanish Omelette

One of the easiest recipes my mom used to make for us in summer was the Spanish Omelette.
It is simple, yet deliciously full of healthy ingredients that make it a filling meal in itself.
Serve with toasted bread & a glass of chilled iced-tea, cranberry juice or a simple banana milkshake!
Ingredients: ( for a 6 person serving )

1/2 cup olive oil
3 potatoes, thinly sliced
Salt and pepper to taste
1 large onion, thinly sliced
4 eggs
Salt and pepper to taste
2 tomatoes - peeled, seeded, and chopped
1 green onion, chopped
1 orange bell pepper, chopped

One of the best heart warming foods in winter is the traditional Czeck dish Svickova - read Svichkova -. It is mainly made of roast tenderloin & sour cream sauce.

Ingredients:

750g beef tenderloin
300g root vegetables - carrots, parsnip - sliced
grated peel of one lemon
2 sliced onions
3 bay leaves
2 tsp thyme
5 peppercorns
1 pint whipping cream
1 tbsp flour
vinegar or lemon juice
100g butter
salt & pepper

Simple Moussaka

Today the fastest thing i thought of making was Moussaka. Moussaka is a delicious Greek traditional dish. It is full of nutritious ingredients, and it is heart warming.
The main ingredient in Moussaka is Eggplant or Aubergine.
This is a simple, and very humble recipe of Moussaka, very easy to make.

Ingredients:

3 eggplants, cut into slices
1/2 kilo minced meat, fried with diced onions, and cooked with 2 tablespoons tomato paste until done.
home-made gratin:
11/2 cups milk
1 tablespoon flour
1 tablespoon mayonnaise
1 tablespoon vinegar
salt, pepper, dry basil
grated cheese

Falafel Recipe

One of the most delicious, mouth-watering foods here in the Arab world is the small, round yummy balls called Falafel!
Falafel is served with Hummus and Fool and is also made into great sandwiches in the Arabic pita bread with a tad bit of Hummus, pickles and a simple cucumber and tomato salad, in addition to the famous Tahina Sauce!
Falafel is pure Arabic, so don’t believe it when it is said that the Arabs have taken the recipe from the Israelis!

I loved them both, but thought I would add a simple sushi recipe for you to try, it is worth it! It is light on the stomach, and extremely healthy.
