One of the most important dishes on the Iftar table in Ramadan is the Lentil Soup.
Lentil soup was once considered the food of the poor, but is now a famous and much-loved dish that's full of nutrition and is an excellent source of Iron and Protein.
This is a very easy recipe that practically cooks itself!
All you need to do is throw everything in a pot, let it boil and then blend it until smooth in a blender! Voila! You've got yourself a heartwarming, smooth lentil soup!
Ingredients:
- 3 tbsp olive oil
- 1 big onion, chopped
- 2 carrot, chopped
- 1 cup lentils, washed
- chicken or meat stock
- 2 garlic cloves, finely chopped
- 1 tsp cumin (you can add more if you like to make the taste stronger)
- salt & pepper for seasoning
- juice of 1 lemon
Put oil, onion and carrot in pot on high fire and stir until tender.
Add the garlic, stir until fragrant, then add washed lentils and stir.
Add 2 1/2 cups stock and let boil.
Lower the heat, cover and let simmer for 15 minutes.
Add cumin, salt and pepper and let simmer for 1 hour.
Keep an eye on the soup, if the liquid starts to evaporate add some more.
Check that the lentils are tender, pour soup into blender and blend until very smooth.
Return to pot and bring to a boil.
Turn fire off.
When serving, you can sprinkle the soup with freshly chopped parsley and there's no doing without the squeeze of lemon!

my mother doesn't understand...She is wondering why this soup is orange whereas lentils are green or black...

We have lentil soup everyday for iftar...the lentils r orange and we also add carrots so thats were the orange come from..but u have to try to make it its the best even thought i have it everyday i would never get sick of eating it!
in morocco we drink the famouse harrira soup and is very famouse trhough north africa, its a very differen cuisine than the middle east!!

just like Zezo said you can get orange lentils, its the best i LOVE it, when its cooked it goes soft like in the picture, we make it alot with Roast Meat.

i spent 3 years trying out all kinds of ways to make it like in the resturaunts and finally my sister figured it out!
like someone else said on here, i could eat this forever and never get sick of it!!!
