sweetcorn chowder

This think soup is the perfect dish for a cold autumn day!
Whether you choose to have it for lunch or dinner, it will warm your tummy and draw a smile on your face!
It's very easy to make and won't take more than 15 minutes of your time!

Ingredients:

650g corn - canned or frozen
2 garlic cloves - peeled
1 small onion - chopped
1 Liter hot vegetable stock made from cube!
2 red chillies - deseeded and finely chopped

To garnish, use tortilla chips and grated cheddar cheese.

In a blender pop the corn, garlic and onions inside and whiz until they form a smooth mush!
Pour into a pot and add the hot vegetable stock over it. Bring to a boil, then simmer for 10 minutes with pot semi-covered!

Meanwhile, heat your oven and spread the tortilla chips in a baking tray and cover with mounds of cheese. Pop into the oven for a few minutes or until the cheese has melted.

Pour into bowls, garnish with the cheesy tortilla chips and sprinkle with the chillies!
