Scotch Eggs

We all know that the most important meal of the day is breakfast ... So, it has to be both yummy & healthy & gives lots of energy for starting the day.
Now that we've basically gotten out our winter coats & are waiting for the winds to blow & the snow to snow ... I have found a great traditional Scottish recipe for a traditional Scottish breakfast item!
Get ready for ... Scotch Eggs!
To make these you have to either prepare them the night before, or wake up really early!

- Ingredients:
4 medium hard-boiled eggs, well chilled
350 grms minced meat
1/2 cup flour
1 egg, beaten
1 cup bread crumbs
Vegetable oil for frying

Peel eggs. Divide meat into 4 portions, each for one egg. Roll each egg in flour then shape a portion of the meat by pressing it gently but firmly around each egg. Dip meat-wrapped eggs into beaten egg & roll in crumbs. At this point you can refrigerate them to make them easier to handle or to fry at another time. Heat oil & cook each egg for 4-5 minutes (4-5 min on each side if shallow frying) or until meat is cooked & browned.
Serve with buttered toast & cherry tomatoes.

    Omg, its totally like Kouba with an egg inside.. HAHAHAAA Thats funny. Looks tasty tho..Kouba;s my fav so that has to tast good :D
