
Tuna & potatoes make a good couple & if you add a few extra's to them, they become exquisite! -to me at least!-
This salad makes a good, fresh dish in summer, a good starter & is also a nice treat for dinner around the year.
Always go for small, baby potatoes & white tuna when making this.
Ingredients:
500 gm baby potatoes, scrubbed
4 tablespoons cream fresh or sour cream
Zest of a lemon & juice of another lemon!
4 tablespoons olive oil
Salt & freshly ground pepper
4 tablespoons horseradish -you can get that from your superstore-
A handful of fresh parsley
A small bunch of spring onions, washed & finely chopped
300 gm white tuna meat
Cook the potatoes in salted boiling water until tender & then drain them, wait for them to cool then peel them! Roughly chop them & put them in your serving bowl.
Add cream fresh, olive oil & lemon zest. Toss & season with salt & pepper.
Add the horseradish, chopped onions, tuna & mix well.
Taste & see how much exactly you would like of the lemon juice.
