carrot & avocado soup

If you are looking for a light, yet filling quick dish to make, then this soup is the answer.
Carrot & Avocado soup, is a nutritious soup, that makes a meal in itself.
When served with toasted garlic bread, it also makes a brunch or a light dinner that is healthy, yummy & easy to make.

Ingredients:
4 carrots
1 avocado
1 potato
1 small onion, diced
1 tablespoon oil
40 ml hot milk
40 ml water
rosemary & thyme
salt

Wash, peel & dice all the vegetables and toss them into a hot pot with the oil.
Add water to pot, and some dry rosemary & thyme.
Cover the pot. When vegetables are done, put the mixture into a blender and blend until completely smooth.
Put back into pot on the fire, add hot milk, and simmer for 3-4 minutes.
Serve hot, with toasted garlic bread.
