Enjoy this hearty vegetarian sandwich for lunch or dinner. Drink a fruity juice with it, like cherry or berry juice. It is very easy to make and very healthy. Try it and you will surely love it.
2 medium sweet peppers (red, yellow or orange)
1 medium eggplant, cut into 12 slices
1 tablespoon olive oil
8 1/2-inch-thick slices French bread or toast
Soft goat cheese (chevre)
Dijon mustard
Wash the peppers, cut into thick slices and clean from seeds and veins.
Dab some olive oil on the eggplant & peppers.
Grill the eggplant slices and pepper slices over the stove fire, or you can grill
them in the oven. Just make sure they are well done and a bit charred.
Take the bread, and dab some cheese and mustard over it.
Add a slice or two of eggplants and the same of peppers.

I love eggplant. I think I am going to make these Friday night. I need to go grocery shopping. Gosh, they sound good! My hubby loves eggplant too!
