date filled cookies

My friend Abeer promised to send me a very yummy cookie recipe, and she did a few days ago; Date Filled Cookies ... Hmmm ... sound really good. Oh! The picture is of professional made Date Cookies, so don't expect the ones made at home to look the same!

Ingredients:

-1 cup of brown sugar
-1 cup of butter
-3 eggs
-2 cup of oatmeal
-2 1/2 cup of flour
-3/4 cup of sour milk (we make sour milk by adding one table spoon of lemon juice or vinegar for a cup of regular milk)
-1 tea-spoon of baking soda in flour.

Filling:

-1 package of dates, finely chopped
-1 cup of brown sugar
-1 cup of warm water

How to prepare the recipe:

-we cook the filling ingredients together until thickened.
-we mix the sugar with the butter till it's creamy.
-we add the eggs and mix well.
-we add the "flour and baking soda mix" with sour milk gradually.
-then we add the oatmeal

now we're supposed to have the thick dough and the thick filling.
we roll the dough on floured board and cut it with a round cookie cutter. we put one teaspoon of the filling and then cover it with another cookie.
we bake it for like 15 minutes in a preheated oven ... and sa7tain wa 3afieh :)
