
This is a simple and very nutritious vegetarian recipe i got from France while i was there on vacation. It is very practical and quick as well.
If you want to make this meal for more than two people, then double the quantities.
Ingredients:
1 can brown lentils
2 eggs
1 teaspoon butter
2 tablespoons olive oil
salt
black pepper
cayenne pepper
toasted bread
Wash the lentils and drop them into a pot, heat over medium fire and add butter, salt, black pepper and cayenne according to your taste. Let cook for about 6 to 7 minutes.
In a pan, fry the eggs 'sunny side up' style in olive oil, then place on top of the lentils to stay hot.
Serve with toasted bread.
