Fish is one of the healthiest foods you can eat, it is light, cholesterol free and full of proteins and minirals.
The other day, my husband came home with a big bag full of flat fish!
What am i going to do? ... i needed a fast and simple way to make something delicious out of these beautiful fish.
I thought of just throwing them into the oven ... yes, why not!
So, this is what i used:
6 flat fish, cleaned and gutted
2 potatoes, pealed and thinly sliced
2 lemons, washed and thinly sliced
1 onion, thinly sliced
5 garlic cloves, thinly sliced
olive oil, apple vinager, salt, pepper
Take a rectangular oven tray, put some olive oil and vinager inside, top that with all the slices of potatoes and onions, half the lemons and garlic.
Wash the fish a bit, then rub with salt and pepper, put in the tray head to tail over the bed of potatoes, then put the rest of the lemon slices and garlic on top of the fish and drizzle with olive oil.
Cover with aluminum foil, and put into a heated oven for half an hour.
Then take off the foil, and keep in the oven for another 15 minutes.
Take them out, and serve with potatoes of your choice; fried, baked, boiled or mashed, and with steamed veggies of youe liking.
