
This recipe is so healthy & nutritious that who ever eats from it becomes somewhat of a Popeye! The combination of Spinach and Eggs is a real winner!
The quantities of the ingredients are for 4 people.
Ingredients:
½ kilo spinach, washed and cleaned
200 grams mozzarella cheese, grated
4 eggs
salt & pepper
30 grams butter
Wash the spinach with boiling water for 5 minutes, then let drain well.
Spread the spinach in an oven casserole, divide butter over it evenly, and crack the eggs over the mixture, each egg at a corner.
Sprinkle with salt and pepper, and bake in a medium heat oven until the eggs are done.
Cover the whole casserole with the grated mozzarella cheese and return to the oven so that the cheese melts.
