Baked Potato

Baked potatoes are a classic, and are often called Jacket Potatoes.
Have them simple, with a bit of salt and a good piece of melted butter in the middle or a drizzle of olive oil.
The beauty of these simple yummies is that they can be topped with anything! It can be cheese and herbs, sour cream and spring onions, shrimps and Thousand Island dressing or the following topping, which is a great sweet & hot mixture …
Chilies, Mozzarella and Basil.

The first thing you have to have ready are the baked potatoes;
Wash your potatoes, prick tem with a fork, and rub them with olive oil and salt.
Place in a heated oven 180 c. or gas num. 5 for an hour.
When done, cut open in half, and add a peace of butter before adding the topping.

Tear up some fresh mozzarella cheese; which comes as small balls in a plastic bag full of water. (You can get it from the dairy shop or the super store)
Add chopped red chilies fresh basil, and a squeeze of lemon juice, and a bit of salt and pepper.

Toss them all together and top the potatoes with this mouthwatering mixture … yummy !
