The first thing you have to know before attempting to try this extremely delicious recipe is “What is Cajun seasoning?”

Cajun seasoning originally comes from New Orleans and the Creoles, and to make your own 1.5 cups of this great seasoning do the following:

Add 3/4 cup salt and 1/4 cup ground red pepper (cayenne) and 2 tablespoon each of ground white and black pepper, paprika, onion and garlic powder.
Layer in a 1-pint jar with lid. Stir before using.
You can toss with potatoes before roasting, rub or sprinkle on fish or chicken.

The following chicken recipe is very easy, and will be a great success with your family and friends, and the kids won’t complain at all.

Ingredients:

2 cups vegetable oil
2 tablespoons Cajun seasoning
2 tablespoons dried Italian-style seasoning (Provencal herbs)
2 tablespoons lemon pepper
Garlic powder to taste
10 skinless, boneless chicken breast halves - pounded to 1/2 inch thickness

In a large shallow dish, mix the oil, Cajun seasoning, Italian seasoning, garlic powder, and lemon pepper. Place the chicken in the dish, and turn to coat with the mixture. Cover, and refrigerate for 1/2 hour.
Preheat the grill for high heat.
Lightly oil the grill grate. Drain chicken, and discard marinade. Place chicken on hot grill and cook for 6 to 8 minutes on each side, or until juices run clear.
