
Wow! What a combination!
My favorite fruit tossed with my favorite seafood! Yummy!
This salad is so refreshing and extremely healthy. You can also add avocados and oranges, and that would give you a taste of heaven.
Serve it as a side dish or as a summery main dish, it is fantastic!
Ingredients:
1 iceberg lettuce, torn
½ cup of sweet corn
1 mango, peeled and cut into strips
½ kilo shrimps (unpeeled)
Thousand island dressing, or blue cheese dressing (you can find these at the superstore)
Take the shrimps, wash them, put them into a pot of water and boil them for 6 to 7 minutes (until they are really pink & orange).
Take them out of the water and peel them carefully, removing all the crust and the hands and legs and the black thread on the back of each shrimp. (Don’t worry, it only sounds difficult, but is not!)
Toss the veggies into a big serving dish, and put the shrimps & mangos on top.
In two small dishes pour some dressing and serve it with the salad on the side.
