This is a simple crab recipe that can be considered a salad or a yummy extra!
This cold salad would make a great entertaining dish for a garden party, or better yet a beach picnic.
Ingredients:
1 teaspoon finely grated fresh lemon zest
1 1/2 tablespoons fresh lemon juice
1/4 teaspoon salt
1/4 teaspoon black pepper
2 1/2 tablespoons olive oil
½ kilo crab sticks or surimi, chopped (using real crab meat is even better)
1/4 cup thinly sliced white and pale green parts of scallions
For the crisps, you will need 6 half baked tortillas, cut into triangles.
Heat vegetable oil in deep frying pan, and when the oil is hot, drop in the tortilla triangles for a 25 seconds until crispy. Take out the crisps and drain them on some kitchen paper.
Whisk together zest, juice, salt, and pepper in a bowl until salt is dissolved, then add olive oil, whisking until combined well. Add crab and scallions to dressing and toss gently to combine.
Serve over a bed of lettuce, or better yet in glasses topped with crisps and lemon wedges.
