greek salad

One of the great salads that are full of nutrition, and are mouth-watering is the Greek Salad.
This recipe is easy to make and goes well with Hummus. Yummy!

2 cups assorted lettuce, chopped or torn
4 tomatoes, wedged or sliced
1 cucumber, seeded and sliced
1 bell pepper, seeded and sliced
1 small, mild white onion, sliced
20 Kalamata olives (Greek style black olives)
4 oz firm feta cheese, cubed (feta is Greek White cheese)
¼ cup olive oil
1 teaspoon dried oregano
¼ cup parsley, chopped
salt
pepper
1/2 lemon

Arrange lettuce in a big salad bowl. Add tomato, cucumber, green pepper, onion, olives, and cheese.
In a small bowl, whisk together oil, herbs, spices, and the juice from half the lemon. Drizzle dressing over the salad.
