While i was in Spain, i fell in love with the food!
The Paella is absolutely unbelievable, but the Gazpacho was fantastic! Especially in the heat, this light vegetarian soup is fresh, cool and delicious ... yummy !
It is so easy to make, and the ingredients are cheap!
Ingredients:
4 cups cold tomato juice
1 small, well minced onion
2 cups freshly diced tomatoes
1 cup minced green pepper
1 diced cucumber
2 scallions, chopped
1 clove crushed garlic
Juice of 1/2 lemon
1 teaspoon each tarragon & basil
Dash of ground cumin
Dash of Tabasco sauce
Salt & Pepper to taste
Combine all ingredients & chill for at least 2 hours. Puree if desired.
